Spicy Pumpkin Cheesecake...
1 egg yolk
1 extra large graham cracker pie crust
2 oz. pkgs. cream cheese, softened
3/4 cup sugar
2 eggs
15 oz. can pumpkin
1 1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
Beat egg yolk and brush on crust. Bake at 350 degrees for 5 minutes and set aside. In a large mixing bowl, beat cream cheese, sugar and eggs at medium speed until smooth. Add pumpkin and remaining spices; continue mixing until well blended. Spoon into pie crust and bake at 350 degrees for 40 to 45 minutes or until set. Cool and refrigerate several hours or overnight. Garnish with whipped cream and toased pecan halves.
